Keep it to two or three tracks. The pass can show more, but a card the customer can't explain to a friend in one sentence has lost the simplicity that makes stamp mechanics work.

Tuning each track's economics

Because every track has its own threshold and reward, each can be priced honestly. The high-margin track can reward generously (buy 5, get a pastry); the low-margin one can ask for more visits (buy 9, get the 10th). Set each track so its free item costs you roughly what a single-category stamp card would have given away — the difference is that now the giveaway lands on the category that can afford it. Reading the results
